Tenderness refers to the shear force required when cutting meat. Shear force refers to the force used by the tool of the test instrument to cut the tested meat sample. The measuring instrument sensor records the force used by the tool when cutting the meat sample and takes the measured shear force peak value (maximum force) as the tenderness value of the meat sample. The machine's measurement and control interface is intuitive, clear and easy to operate. It is widely used in food factories, colleges and universities, scientific research institutions, technical supervision, quality inspection stations and other departments.
